ابدأ من باب العامود ودع الانحدار يحملك. السوق يرتب نفسه حسب الحرف كما فعل منذ قرون، فتتبدل الرائحة كل ثلاثين متراً: هيل وقهوة، ثم زعتر وسمّاق في أكياس مفتوحة، ثم رائحة اللحّامين النظيفة الحادة، ثم سمسم من أفران الكعك. اشترِ كعك القدس، الحلقة الطويلة بالسمسم، واطلب معه قرطاس الزعتر والبيضة المسلوقة. هذا هو الفطور هنا منذ أجيال. الطعام لا يُفاصَل عليه عادة، أما القماش والتذكارات فنعم. وإن عرض عليك صاحب الدكان الشاي فالجلوس ليس فخاً بل هو صلب المعاملة.
Start at Damascus Gate and let the slope carry you down. The market sorts itself by trade the way it has for centuries, so the smell changes every thirty metres: cardamom and coffee, then za'atar and sumac in open sacks, then the sharp clean smell of the butchers, then sesame from the ka'ak ovens. Buy a ka'ak al-Quds — the long sesame ring — and ask for the paper cone of za'atar and boiled egg that comes with it. That is breakfast here and has been for generations. Prices are not usually haggled for food; they are for fabric and souvenirs. If a shopkeeper offers you tea, sitting for it is not a trap, it is the transaction.
