حبات قمح تُفتل باليد، أكبر بكثير من الكسكس، تُفرك بين الكفين مع البرغل الناعم والطحين ثم تُبخّر فوق قدر دجاج وحمص. وفتل المفتول عمل بطيء تقوم به عادةً عدة نساء معاً، ولذلك هو للأعراس والأعياد وأيام الأحد لا لأيام الأسبوع العادية.
Hand-rolled wheat pearls, much larger than couscous, rolled between the palms with fine bulgur and flour and then steamed above a pot of chicken and chickpeas. Rolling maftoul is slow work usually done by several women together, which is why it belongs to weddings, feasts and Sundays rather than an ordinary weekday.
